The internal conflict of wanting to be healthy but also looooving waffles.

When I was little, one of the things I looked forward to most about being an adult was being able to eat waffles as often and as much as I wanted. At football tournaments, I was usually allowed to eat one waffle. One. As if the waffle was a rare diamond and I was there to learn "discipline." It taught me that: I'm going to grow up, and when I do… no one will limit the number of waffles I can eat.

And so it was. I ate waffles several (read many) times a week. I could even say: "I'm healthy, but I loooove waffles." It was the "but" that was the downside of that statement. Because why should it be a conflict? Why can't I be healthy and loooove waffles?

So I did what any sensible person does: I started experimenting in the kitchen like a mildly overzealous waffle researcher and am delighted to share a more "defensible" batter that doesn't have to taste like a punishment.

Before you start: the rule that makes this easy

Rule of thumb: 2 eggs per 1 banana. You can scale up or down, depending on how many waffles you want.

In this recipe, I suggest:

  • 3 bananas (depending on size)
  • 6 eggs

Makes approx. 6–8 waffles (depending on your waffle iron + how generous you are with the ladle).

PS! The yellower the bananas, the better; if they're green, there's quickly a hint of "punishment" in the taste.

What you need

Base:

  • 3 bananas (small bananas? feel free to use an extra one)
  • 6 eggs (2 eggs per banana)
  • 1 cup oats
  • 2 tbsp coconut oil (liquid margarine also works)
  • 3 tbsp chia seeds
  • 2 tsp cinnamon
  • 2 tsp cardamom
  • 1 pinch sea salt

Optional (and best):

  • Pumpkin seeds
  • Sunflower seeds
  • Raisins
  • Shredded coconut

Instructions

  1. Mix bananas + eggs + oats + coconut oil + chia seeds together (with a mixer)
  2. Add cinnamon, cardamom, and a pinch of sea salt. Mix quickly again.
  3. Fold in (do not mix!) optionally: pumpkin seeds, sunflower seeds, raisins, and/or shredded coconut. The point is chunks and texture, not that everything turns to powder.
  4. Cook in a waffle iron until golden.
  5. Serve as you like and enjoy being able to say:

Healthier and delicious waffles, or as I now say "I'm healthy and loooove waffles"
